If you serve Indian food in your restaurant, you definitely are serving Chicken tandoori like many others. But many restaurant owners do one mistake while preparing Chicken tandoori. They treat this dish just like any other chicken dish and that is totally unfair.

Chicken tandoori is known for the blast of Indian flavours and its unique texture. If you want to serve this dish with its authentic flavour and texture, use India spices and herbs while marinating and for its unique crispy from outside and juicy from inside texture use Tandoorovens. Tandoor are Indian style of ovens and there are commercial tandoor ovens also available in market for the restaurants and catering businesses.

Now preparing chicken tandoori in Indian style may sound complicated but actually it is not. You need chicken drumsticks, Indian herbs & spices, a tandoor oven and a little bit of patients and that’s it.

How to prepare Chicken tandoori in Indian style?
Preparing chicken tandoori is simple and we can divide the whole procedure into five steps.

  • Chicken drumsticks - Wash them, wipe them and make few deep cuts in them all
  • First marination -Take a mixture of salt, lemon and red chilli powder, cover the drumsticks in this mixture and keep them aside for 10 minutes.
  •  Second marination -  Make a thick paste of curd/ yogurt, salt, ginger garlic paste, chilli powder, turmeric, garam masala and dried fenugreek leaves. Apply it over the already marinated chicken drumsticks and put them into fridge for next six hours.
  • Prepare the tray in commercial tandoor oven by lining it with aluminium foil. Preheat the oven on 250o C and then put the chicken into oven to bake it for next 10 minutes.
  • Remove the tray, flip the drum sticks once, apply some oil, reduce the temperature of oven to 160 and again bake chicken for 10 minutes. Repeat it once more and your chicken tandoori is ready.
